Flexitarian Week 2

This week our challenge was to continue with a mix of vegetarian / non-vegetarian days but fit that around a day out with friends, when we knew we would wish to eat ham, cheese and bread. So Monday ended up a meat day but we started off with a fruit smoothie to give us a head start and a few of our 5-a-day. Thursday I persuaded Thomas to make the dinner, which meant a chicken option as he does the best schnitzel iI've ever had! So we ended up with 2 vegetarian days and 4 days with either meat, chicken or fish, but still plenty of fruit and veg too.

Monday
Banana, strawberry and loquat smoothie
Serano ham, pate, cheeses, crackers and bread, olives and red wine
Pistachio icecream .... could not resist!

















Tuesday
Porridge with grated apple and strawberries
Grilled vegetable salad with balsamic pears
Spiced bean burgers with avocado, tomato and potato wedges




Wednesday
Srambled eggs with tomato and avocado, glass of fresh squeezed orange juice
Apple
Caulifower and orange salad and 3 bean salad
Olives and cheese with a glass of sherry
Penne with courgette and fennel sauce




Thursday
Muesli and banana, with milk
Lentil, courgette and apple salad with yoghurt dressing
Chicken schnitzel with mashed potato and peas




Friday
Greek yoghurt with strawberries and banana
Mixed salads - cauliflower, 3 bean and pasta
Coffee and small pastry
Panfried gilt-head bream with rosemary butter sauce and mixed meditteranean vegetables, white wine




Saturday
Brunch of boiled eggs, greek yoghurt, strawberries, semi-cured cheese, tomato, fresh bread and coffee
Carrot sticks and houmous
Tapas - sardines in olive oil, chorizo with lentils, pinchos of serrano ham artichokes and cured cheese, olives, red wine
