Stuffed Avocados

Great for both a starter or light supper with salad, these stuffed and baked avocados are a sure winner.

Ingredients
2 Avocado pears, halved & pip removed
1 roasted red pepper
1 roasted yellow pepper
1 clove roasted garlic
2 tomatoes peeled, seeds removed 
fresh mint

  • Remove the avocado halves from their skin and place on a baking tray
  • Pulse the peppers, garlic and tomatoes in a food processor until combined and roughly chopped
  • Fill the avocados with the pepper mixture and bake in the oven for 30 mintues.
  • Remove and sprinkle with fresh chopped mint.
  • Serve!
For something a little different, add a little mozzarella or use fresh basil in place of the mint
