Yesterday was shopping and food prep day –for me it’s a day
of chopping, cooking, tasting and Thomas enjoys a chilled out day of reading
and sampling.

Beetroot – I couldn’t get black aubergine and thought this would be an
interesting alternative
Dark Rye
Ryvita – it was on special offer (normally its expensive in Phuket(. Great
alternative to bread
Large Dried Chillies- they last for ages and I think they’ll be tasty in my Thai curry
paste
I’ve never
cooked fresh beetroot before so I needed to look up how to prep/ cook it. The end result was a flavoursome salad ingredient – great
with grated carrot, chopped red cabbage, sliced red onions and a wholegrain
mustard/ mint vinegarette. The perfect starter for our lentil lasagne.
All that
hard work I was deserving of a cocktail – a refreshing Watermelon Daiquiri
Chop &
blend the watermelon, then freeze into cubes using an ice cube tray
Take 2
measures of rum
Add juice
from ½ a lime
Blend with
the several watermelon cubes
Pour into
glasses & top with a few shredded mint leaves
Ahhh – Happy
