Spice Paste

Great for use in stir fries or Asian style soups.

Ingredients
2 Lemon grass stalks trimmed
2cm piece ginger
2 cloves garlic
2 shallots
3 dried chillies, soaked then chopped
1 fresh red chilli (only if you like it super spicy!)
Handful fresh coriander
1 tsp ground coriander
1/2 tsp cumin
1/2 tsp turmeric

Put all the ingredients in a food processor and blend until a rough paste has formed.Add  little water, oil or fish sauce if its too dry.
