Courgette Fritters


Rich in vitamin C and a great source of folic acid, potassium, manganese and phosphorus, courgettes (zucchini) are a fruit that should not be overlooked! These simple to make fritters are great for a snack or as a light lunch with salad. They are also great cold so can be packed up in a to-go box for a lunch whilst travelling.

Ingredients
2 medium sized courgettes, grated
25g plain flour
1/2 tsp fennel seeds, cruhsed
salt & pepper
2tbls vegetable oil for shallow frying

Place the grated courgette in a sieve and sprinkle with salt, leave for 20 minutes then squeeze out the excess water. Place in a bowl with the crushed fennel seeds and black pepper,mix well. Stir in the flour until the flour until the mixture has a thick "dropping" consistency - like a stick paste.


Heat the oil in a frying pan or wok, when hot drop in a heaped dessert spoon of the courgette mix and flatten. Mix should make 5-6 fritters. shallow fry for 3-4 minutes on both sides, until golden brown and cooked through.

Serve with salad and mint raita.
